Chicken Broccoli Alfredo Pasta


serves 4

25 gm butter (do NOT use oil)

1 onion, finely diced

350 gm diced boneless, skinless chicken meat (breast or thigh)

1 tin Campbells condensed mushroom soup (must use Campbells, the dish doesn’t work with other brands)

½ tin milk (can use soy if desired)

1 C grated cheese

1 head brocolli, cut into small florets and part-cooked

2 C cooked pasta

In a frypan, brown the onion in the butter, add the chicken and brown on all sides.  Add the can of soup, and swish the milk in the empty can to rinse it, before adding to the frypan.  Remove from heat and stir in the grated cheese.  Just before serving, stir in the part cooked brocolli.  Serve chicken and brocolli over cooked pasta.
