Potato Pumpkin and Lentil Curry


serves 4

1 Onion, finely diced

2 t minced garlic

2 heaped t minced ginger

3T Pataks Korma Curry Paste (this is about $7 for a jar, but lasts ages)

1 tin Watties Pumpkin Soup

1 tin coconut cream

1 tin Craigs brown lentils, drained and rinsed; OR 1 cup of dried brown lentils, soaked twice in boiling water until water is cold, then boiled for 20 mins or until soft

400gm boiled potatoes, cut into chunks

Heat 2 T oil in large pot, add onion, garlic and ginger and cook gently until onion is translucent and garlic and ginger are not coloured. Add curry paste and stir until spices are fragrant. Add soup, and mix well. Add coconut cream and drained lentils. Simmer gently for 10 minutes. Add cooked potatoes, and stir through. Remove from heat, and serve over cooked basmati rice.
