Simple Cous Cous


Serves 4

2 t oil

1 finely diced onion

1 t minced garlic

1/8 t minced chilli

1 T lemon zest

2 C hot stock (2 C boiling water + 2 stock cubes)

1 C “instant” cous cous

Juice of the lemon.

1 tomato, finely diced

Heat the oil in a pot, and gently cook the onion until clear.  Add the garlic and cook (do not brown as this makes the garlic bitter).  Add the chilli and lemon zest and stir.  Let cook for a few minutes.   Remove from heat, add the hot stock and then the cous cous.  Stir and cover.  Let sit for 5 minutes until cooked.  Add the lemon juice and fluff with a fork.  Gently mix in the tomato if using.
