Vegetarian Lasagne


serves 6 – 8

1 C cooked well-drained spinach

500 gm cottage cheese

¼ C grated Parmesan cheese

Pinch nutmeg

2 t minced garlic

2 tins chopped tomatoes in juice (save the juice of one can)

½ C grated cheese

Fresh lasagne sheets

Finely chop the spinach and combine with the cottage cheese,  parmesan, nutmeg, and garlic.  Layer mixture with lasagne sheets.  Spoon on the tomatoes, and the juice from one can.  Sprinkle cheese on top, and bake at 180 degrees for 30 minutes.

*freezes and reheats well – perfect for taking leftovers to work for lunch*
