Tomorrow is International Random Act Of Kindness Day


Random Acts of Kindness.  The act of randomly doing kind acts for others.

It is not widely known, but I do a day and a half’s voluntary work at our local Budget Office. I work on the Reception desk, answering the phones, making appointments, doing admin work, typing, design and print of posters/flyers etc etc.

Tomorrow is the full day of that voluntary work.  Tomorrow is also International Random Act of Kindness Day.

So tonight, I made a dozen Orange and Spice Muffins, to be individually wrapped and put out on our  coffee table for our clients to have.

Here is the recipe:

Orange and Spice Muffins

2 C flour

4 t baking powder

1/2 C sugar

grated zest of 2 oranges

75gm butter (melted)

1 pottle (1/2 C) vanilla yoghurt

1 egg

juice of 2 oranges    )   Made up to 3/4 C liquid: measure the orange juice and add the                                                           required milk without mixing the liquids

1/2 C milk                  )


Measure the flour, baking powder, sugar and zest into a large bowl, and stir well to mix.  In a separate bowl, melt the butter and then add the yoghurt and egg.  Mix well to combine, and set aside.  Measure the orange juice and add to the flour.  Add the butter mix as well and briefly mix, then add the milk, and mix until there is no more gaps of flour but do not mix until smooth.  Line a 12 space muffin tin with muffin cases, or spray with cooking oil spray, and gently spoon mix into the tins – about 1/2 C of mix per muffin hole.

Bake at 200deg for 10 – 15 minutes until golden brown and centre springs back when gently pressed.  Let cool.
