On Thursday it was my birthday, and as is the tradition in our home, the Birthday person gets to choose what they wanted for their dinner.
Thursday night was also Food Truck night… Once a month, the carpark of Te Takare (our local library/meeting place/etc) is transformed to be encircled by delicious food trucks of various cuisines.
Miss T had free-range chicken nuggets and hand-cut chips from the Duchy’s Burger truck, and I had planned to have a Venison burger… however, due to unforeseen circumstances, I didn’t end up having my birthday dinner as planned…
Never mind; the Food Trucks come around each month, so I will have my Food Truck Dinner next month.
Tonight though, Miss E is at work and then going off to a 21st Party, so it is just me and Miss T at home.
We decided to have baked chicken drumsticks, with brown rice and stirfried veges.
I am all for healthy food that is easy to cook, and occasionally I use packet sauces (I say occasionally because there is a large amount of sugar in them). Tonight, I used the Lee Kum Kee Lemon and Soy stirfry sauce, mainly because I don’t have any honey at present).
I took about half the packet of sauce out of the packet and in the last 10 minutes of cooking for the drumsticks, I poured this over the chicken.
I heated some oil in a fry pan, added a sliced onion and a few teaspoons of minced garlic, before adding the defrosted and well drained frozen stir-fry veges (Complex Vege Mixes are great for this), and then at the last minute added the rest of the sauce packet.
Serve with steamed brown rice (I have a Sistema Microwave Rice Cooker).
