My lovely friend Michelle shared this “family” recipe with me yesterday, and it sounded so easy and delicious, I decided to make it for dinner tonight.
The recipe is quite simple, although there is a little bit of preparation involved.
Crumbed Potato Balls
4 medium potatoes, peeled and cut into even sized pieces
1 onion, finely diced and sauteed
1 C grated cheese
2 ham steaks, diced
1/2 C plain flour
1/2 – 1 C bread crumbs
Oil for frying
Boil,drain, and then mash up potatoes (do not add butter or milk),
add cooked onion, grated cheese, and add ham (if desired). Mix well.
Put to one side to cool.
Once cool, you can either roll the potato and let the balls sit in the fridge (which is what I did) and the crumb them later,
or roll and crumb then refrigerate them.
In 3 separate bowls, place flour, beaten egg, and breadcrumbs.
Take a dessert spoon of potato, roll into a ball, roll in the flour, roll in egg, roll in breadcrumbs.
Leave in fridge for about an hour (or longer, it doesn’t matter).
Then shallow fry in oil, turning occasionally, or deep fry.
We had our potato and cheese balls with carrots, broccoli, bacon, and gravy. Delicious!
